Acknowledged as the master of ‘New Italian Style’ cuisine, Michelin-starred Chef Alfredo Russo’s annual visits to Rossini’s have always been a highlight of Bangkok’s dining calendar.
Now the creative genius behind the revered “Il Dolce Stil Novo” restaurant in Turin returns for what is surely one of the city’s most significant and anticipated culinary events.
Chef Alfredo will be resident at Rossini’s for an extended period from January 25th - 31st, 2011. With his passion for Italian cuisine, distinctive style, and a desire for constant innovation, he will turn Rossini’s into one of Bangkok’s most essential dining experiences.
While overseeing the culinary evolution of Rossini’s, Chef Alfredo will introduce his signature dishes to the menu, create special a la carte and tasting menus, establish a cellar of exceptional wines to complement his cuisine, and make regular return visits to the restaurant throughout the year to host renowned wine dinners.
A native of Turin, Chef Alfredo Russo discovered his gift for cooking at the tender age of 13. After studying at catering school, he worked in three different Michelin-starred restaurants in Piedmont. In the late 1990s, he opened Il Dolce Stil Novo and just three years later won a coveted Michelin star and membership into the Jeunes Restaurateurs d’Europe Association. Chef Alfredo was also named best Young Chef of the Year in 2004. Other honors have included an invitation to organize a gala dinner for the visiting International Olympic Committee in Turin, and to serve his distinctive Piedmont cuisine to UN ambassadors and delegates.
His prestigious restaurant, Il Dolce Stil Novo, is regarded as one of the finest dining experiences in Italy. The elegant restaurant is located in the Royal Palace of Venaria where Chef Alfredo invites diners on a memorable culinary journey infused with the rich history of the beautiful palace.
Chef Alfredo is an extraordinary talent. Over the coming year, he will create a unique dining concept for Rossini’s and outstanding menus of Michelin star Italian cuisine to enjoy in an elegant Tuscan villa setting.
In January, Chef Russo will offer two new menus created especially for Rossini’s discerning diners. The first set meal will begin with an olive and Martini, and cuori di carciofi con zabaione di pistacchi e parmigiano, artichoke hearts with pistachio sabayon and Parmesan. Other exquisite dishes on the outstanding menu are gnocchi di patate arrostiti con fonduta leggera e speck, a delightful roasted potato gnocchi with bacon and Fontina sauce, and a main course of coscia d'anatra in cottura lunga profumata agli agrumi, duck leg cooked with fragrant citrus fruits. A divine dessert of profiteroles di cioccolato bianco, pepe rosa e aneto, profiteroles with white chocolate, pink pepper and dill will end the meal on a high note.
The second beautifully balanced and creative menu will start with an olive and Martini, and uovo croccante con cuori di cardi e spinaci, crispy egg with spinach and hearts of thistles followed by lingua di vitello, barbabietole rosse e aceto balsamico, a fabulous dish of veal tongue, beetroot and balsamic vinegar.
Diners will also enjoy fagioli e fegatini all'olio crudo, a terrine of pasta, beans and chicken liver, and stinco di maialino in crosta di rafano con patate al sale, knuckle of pork with a horseradish crust and salted potatoes. A semifreddo di arance di Sicilia, finocchi, carote e pomodoro, a parfait with Sicilian oranges, fennel, carrots and tomatoes will end the extraordinary dining experience with Chef Russo’s distinctive touch
