Mr. Christophe L.M. Caron, Vice President of Sofitel South East Asia & India and General Manager of Sofitel Bangkok Silom, is pleased to announce the appointment of Mr. Jean-Paul Lourdes as Executive Sous Chef and V9 Wine & Dining Chef.
The French-Mexican man spent his childhood in Japan where he spent 12 years, a country that left its mark in Mr.Jean-Paul’s whole cooking and lifestyle.
Aspiring to become a scientist and more precisely a molecular biologist, Mr.Jean-Paul graduated from the University of New South Wales, Australia with a Master of Science in Food and Nutrition (HONS) in hands. His passion for creation and the development of new products made him turn to cooking when he came to realize the lack of excitement in waiting for a long period of time to see the results of his researches.
From Chef de Partie, he then performed as Sous Chef in several renowned Star Michelin restaurants in England and France; among them 2-Star Michelin restaurant Sketch, England. In 2008, remembering his initial infatuation and studies, he worked for Firmenich in New Jersey, USA as a Molecular Biologist, seeking for more recognition and inspiration. Since then he has returned to the kitchen trying to combine his passions by applying his scientific knowledge on food to his cooking as Chef de Cuisine for the Shangri-la China World Summit Wing, China.
Prior to this appointment, he was a Chef de Cuisine for the 2-Star Michelin Restaurant of Seiji Yamamoto in Tokyo, Japan. Chef Jean-Paul currently joins the Sofitel Bangkok Silom team as Executive Sous Chef and V9 Wine and Dining Chef. This “Naturalist” is sure to bring creativity, excitement and a new vision to V9 food and beverage menu.
