The “Primavera Al Rossini’s” Wine Dinner celebrates the arrival of spring with a feast of seasonal dishes, prepared by Chef Stefano Merlo, and paired with a special selection of exceptional Italian wines.
Chef Stefano’s outstanding menu of rustic and simple dishes has been created to bring out the best in a bountiful harvest of fresh spring produce imported from Italy. The evening begins with chef’s delicious savoury bites and stuzzichini complimented by Passerina Brut Velenosi, a lively sparkling wine with citrus fruit sensations and an intense aroma of flowers and peaches.
The memorable five-course dining experience starts with branzino marinato con asparagi novelli, marinated sea bream with novelli asparagus. The light and delicate starter is served with Vesevo Greco di Tufo, DOCG 2009, a well-balanced medium-bodied wine made using 100% Greco grapes, and a perfect match for Chef Stefano’s delightful fish dish.
The second dish of the evening is lasagnetta ai funghi porcini freschi, a lasagne of fresh porcini mushrooms. To compliment the flavoursome fungi, Rossini’s sommelier has selected Poggio San Polo Rubio, IGT 2008. Awarded 92 points by Wine Enthusiast Magazine, the well-structured and brilliant ruby red wine displays a persistent bouquet filled with fresh aromas of red cherries, violets and currants.
Diners will also enjoy the intriguing risotto e fumo, spring hay smoked risotto paired with Poggio al Tesoro Sondraia Bolgheri, DOC 2007. The blend of Cabernet Sauvignon, Merlot and Cabernet Franc grapes spent 18 months in French oak barriques resulting in a full-bodied wine with silky ripe tannins.
A highlight of the celebration of spring is Chef Stefano’s Italian classic ossobuco brasato con fagioli all’uccelletto, braised ossobuco with Tuscan beans. The hearty and rustic dish is served with Poggio al Tesoro Mediterra, IGT 2008. The full-bodied blend of Syrah, Merlot and Cabernet Sauvignon delivers an impressive long finish, a sweet aftertaste and a fresh and fruity bouquet.
The unforgettable “Primavera Al Rossini’s” Wine Dinner ends on a high note with tiramisu souffl? followed by coffee or tea and biscotti. The decadent dessert is beautifully matched with Moscato D’Asti Bosc D’la Rei 2009.
