The ultimate in-flight menu enhances the onboard culinary experience
British Airways is bringing taste to a whole new dimension with the introduction of ‘Height Cuisine’, the ultimate in-flight menu. Created in collaboration with renowned celebrity chef Heston Blumenthal, British Airways is looking to create for its customers a culinary experience as memorable at 35,000 feet in the air as it would be on the ground.
“During a flight, the body is subjected to a number of environmental stressors, all of which can affect passengers’ ability to taste, such as reduced oxygen levels, atmospheric pressure changes, low humidity and changes in time zones,” said Neil Ager, British Airways Country Manager, Thailand, Vietnam and Cambodia. “Recognising the impact these factors can have on a travel experience, earlier this year British Airways challenged chef Heston Blumenthal to help us create the ultimate in-flight menu.”
One of Heston Blumenthal’s recommendations to British Airways was to use ingredients in its dishes which are high in umami, a savoury flavour known as the ‘fifth taste’, which occurs naturally in foods such as seaweed, tomatoes, mackerel and parmesan cheese.
The new umami-based menus have recently appeared onboard British Airways flights and have been positively received by customers in First and Club World business class.
“Inflight dining is becoming an increasingly important consideration for many people. Over the years British Airways has invested considerable resources into developing the very best menus for our customers. We are confident that as a result of our commitment to improving the dining experience, our food is one reason why many customers choose to fly with us,” said Ager.
