Seated in the enchanting Tuscan villa setting of Rossini’s, discerning diners will enjoy authentic gourmet Italian cuisine created by Chef Stefano Merlo to compliment an outstanding selection of renowned Cesari wines. Cesari was founded in 1936 by Gerardo Cesari. Situated in the gentle hills in the province of Verona, the vineyards are known for producing classic varietals such as Amarone, Valpolicella, Pinot Grigio, and Soave. In the early 1960’s, Gerardo’s son, Franco, took over as the master winemaker, expanding the winery and exploring the international market. Today, Cesari wines are exported worldwide and have received numerous prestigious awards including Wine Enthusiast magazine’s Top 100 Cellar Selection, a Silver Medal at Canada’s Mondiales de Vins International Wine Championship, a Gold Medal at the UK’s International Wine & Spirit Competition, and many more. The five-course meal will start with frutti di mare e patate al tartufo, shellfish with potato and truffle served with Cesari Pinot Grigio 2009. Produced with grapes from Italy’s Tre Venezie region, the straw-yellow dry wine has a persistent bouquet and is a perfect match for Chef Stefano’s delicately flavored seafood dish. The second dish, a rich and satisfying risotto al Castelmagno e rapa rossa, Castelmagno cheese risotto and beetroot will be served with Cesari Mara Valpolicella Superiore Vino Ripasso 2007. Taking its name from “Mara”, the Italian name of a maternal grandmother, this classic traditional red wine distinctly expresses Cesari’s history, territory and production methods. Aged in oak for 12 months, the warm and elegant wine exhibits characteristic notes of ripe fruit and preserves. Chef Stefano’s delightful quaglia arrostita, roasted quail will be paired with Cesari Amarone Della Valpolicella Classico 2006. An engaging blend of Corvina Veronese, Rondinella and Molinara varietals, the wine displays raisins and cherry flavors with hints of vanilla and spice followed by a persistent finish. A highlight of the evening will be the succulent guancia di manzo con pomodoro candito, beef cheek with candied tomato. A complex oak-aged Cesari Amarone Bosco Valpolicella Classico 2005 was the inspiration behind Chef Stefano’s exqusite dish will compliment beautifully with this noble and characteristic wine. The unforgettable evening ends with gelato al Vin Santo con Cantucci croccanti e frutta, Vin Santo ice cream with crunchy Cantucci Tuscan almond biscuits and fruit followed by coffee and tea.
