Chef Stefano Merlo invites diners to experience a memorable evening of authentic Italian cuisine created to compliment an outstanding selection of wines from two of Italy’s best producers, Follador and Corte Rugolin Amarone.
Follador have been producing fine wines in the Veneto region of northeast Italy since 1769. Today, Gianfranco Follador continues to follow the passions of his forefathers. Marrying traditional vineyard cultivation with the latest production techniques, he is renowned for creating sparkling Prosecco of exceptional quality. Follador is the recipient of numerous awards and this year alone recieved12 honors at the Sommelier Wine Awards, and the Decanter International Wine Challenge including the coveted Gold Award in the Sparkling Wine & Champagne category.
Established in 1995, Corte Rugolin is located in the heart of Italy’s Valpolicella Classico region. The youthful winery quickly gained a reputation for producing characterful Valpolicella Classico, Valpolicella Ripasso and Amarone della Valpolicella wines matured in small oak barrels.
Diners at the Follador & Corte Rugolin Amarone Wine Dinner will be welcomed with a glass of sparkling Follador Silver Prosecco to accompany Chef Stefano’s delightful savory bites.
In Rossini’s enchanting Tuscan villa setting, lovers of gourmet cuisine and fine wines will enjoy totano farcito alle cozze, stuffed tattler and mussels paired with Follador Prosecco Cuvee’ Torri di Credazzo, a supple, full-bodied wine with elegant nuances of apple, peach and rose petals, and fine persistent bubbles.
The second dish will be the perfectly cooked risotto alla cipolla di tropea, guanciale e gorgonzola delle malghe, risotto with tropea onion, pork guanciale and gorgonzola cheese. The divine dish will be accompanied by Corte Rugolin Valpolicella Ripasso 2008. A voluminous wine with an intense bouquet of sweet cherries, it delivers a multi-layered, opulent mouth feel and is the ideal match for Chef Stefano’s savory risotto.
A highlight of the memorable evening will be fiorentina alla griglia, a grilled Florence t-bone steak of exceptional quality complimented by Corte Rugolin Amarone della Valpolicella 2006. One of the Veneto region's most prestigious wines, Amarone della Valpolicella has played a vital part in boosting the Italy’s status in the wine world and is an inspired choice to pair with the succulent beef.
Chef Stefano’s divine dessert of gelato alla pesca con cialda di amaretto e spuma calda di cioccolato, peach ice cream with crunchy amaretto biscuit and hot chocolate, ends the unforgettable evening. The sweet temptation will be paired with Follador Prosecco Moscato Rosa and followed by coffee, tea and biscotti.
