The open kitchen of La Scala will come alive with the irresistible aroma of white truffles from the Alba region of northern Italy, giving guests an opportunity to indulge in the ultimate truffle experience for both lunch and dinner during 2-23 December 2011.
Truffles or “tartufi” are rich-flavoured mushrooms and first appear in early autumn, occurring from October to December. They are rounded and irregularly shaped, white truffles usually being double the size of black truffles with a smooth exterior and a pungent fragrance best described as a blend of garlic, mushrooms and matured parmesan cheese.
Our Italian Master Chef Maurizio Menconi has specially prepared an ? la carte menu that highlights the distinct flavours of White Alba Truffles which includes Creamed Winter Chards Soup with “Paolo Parisi” Organic Egg, Parmesan Crisp and Truffle Croutons; Prime Carnaroli Risotto with Toma Piemontese and Melted Leek; Forty Duck Egg Yolks Tajarin Pasta with 24 Months Aged Parmesan Fondue; Seared Hokkaido Scallops with Celeriac-Truffle Flan and Champignon de Paris & Chestnuts; Slow Roasted Grey Guinea Fowl with Artichokes, Sesame Saut?ed Spinach, Black Winter Truffle Sauce and Shaved White Truffle; Chilled Tapioca-Milk Soup with White Truffle Ice Cream, Butternut Squash Parfait with Sabl?e Breton and Peppered Araguani Chocolate & Black Truffle Warm Tortino.
La Scala opens daily: Lunch from 12:00 to 15:00 hrs and Dinner from 18:30 to 23:00 hrs.
