In Chinese cuisine, shark’s fin is considered a delicacy and a health tonic, so it is greatly revered in a meal. Two perennial favourites are Double Boiled Shark’s Fin with Scallops and Conpoy in Clear Soup (900 Bath++) and Double Boiled Shark’s Fin with Bamboo Pith, Ham and Black Mushrooms in Clear Soup. (750 Bath++) And both will be skillfully prepared at The Emperor Restaurant this month.
