Chef Stefano Merlo’s recent victory on the renowned television culinary show, “Iron Chef Thailand”, has further enhanced his reputation as a truly remarkable chef and Rossini’s as one of the finest Italian restaurants in Bangkok.
Renowned for his exquisite traditional Italian cuisine, Chef Stefano Merlo challenged the reigning Iron Chef, who cooked up a menu of distinctly modern molecular international cuisine. But it was the gifted Chef Stefano’s combination of authentic flavors, innovative technique, and his chosen theme ingredient, prime Ponyangkham beef that delighted the judges.

His highly accomplished prize winning menu features melt-in-the-mouth beef tartare in bark with truffle mayonnaise and flavored napkins followed by Sambuca-scented bull’s testicles with apple, succulent tobacco smoked, slow cooked and half grilled beef tenderloin, and finally, hot sanguinaccio foam, a unique Italian dessert made from blood and chocolate and served with Bacardi and crushed ice. Italian sommelier, Giulio Saverino, will also be on hand to recommend exceptional wines to complement the cuisine from “primoVino by Rossini’s”, a brand new concept introducing diners to “The art of experiencing top shelf wine at cellar prices”.
Stefano Merlo is a naturally gifted chef with a life-long passion for food. He hails from the historic city of Padua in northern Italy where he spent the formative years of his career mastering his native cuisine. Chef Stefano’s extraordinary skills and a desire for new challenges then led him to Tokyo and the celebrated restaurant Enoteca Pinchiorri at Relais & Chateaux. Regarded as one of the finest Italian restaurants in Japan, Chef Stefano worked alongside respected Head Chef, Toshikazu Tsuji. Returning to Italy, he joined the team at Le Calandre, a three-star Michelin restaurant regarded as one of the finest dining experiences in Italy.
Chef Stefano joined Rossini’s award-winning restaurant at Sheraton Grande Sukhumvit in 2010, infusing the menu with his passion and love of traditional Italian cuisine. At Rossini’s he has also collaborated closely with Michelin-starred Chef Alfredo Russo to create a truly unforgettable gastronomic experience.
