From 9-19 April 2026, Ventisi Restaurant and Tea & Tipple present a limited-time Khao Chae Ritual Experience, created in collaboration with Banya Thai Restaurant & Home Cooking, recognised by the MICHELIN Guide since 2019.
A seasonal tradition of summer in Thailand, Khao Chae has long been associated with Songkran and the rituals of summer dining. Translating to 'rice soaked in water', the dish is served with steamed rice immersed in chilled jasmine-scented water and accompanied by an assortment of carefully prepared condiments that balance sweet, savoury, and aromatic notes.
At Ventisi and Tea & Tipple, the set includes shrimp paste balls, stuffed sweet peppers with pork and shrimp, sweet shredded pork, sweet shredded fish, deep-fried shallots, and stir-fried sweet radish, each element prepared in keeping with the dish's time-honoured character.
With origins tracing back to the Mon people, where it was traditionally offered during Songkran, Khao Chae later found its place within the Thai royal court, becoming one of the country's most distinctive seasonal dishes. Celebrated for its refreshing qualities and intricate preparation, it remains an enduring symbol of summer in Thailand.
