Silver Waves by Boon invites discerning diners to an extraordinary evening of contemporary Cantonese cuisine with an exclusive 4 Hands Gala Dinner by Chef Ho Chee Boon and Chef Alvin Leung on 18 July 2026 at Silver Waves by Boon, located on the 36th floor of Chatrium Hotel Riverside Bangkok.
For one night only, Michelin-starred Chef Ho Chee Boon will join hands with internationally renowned Chef Alvin Leung, widely known as the "Demon Chef", to present an intimate 8-course gala dinner shaped by heritage, imagination, and refined modern technique.
Set high above the Chao Phraya River, the evening brings together two distinctive culinary voices. Chef Ho Chee Boon, celebrated for his elegant approach to modern Cantonese cuisine, offers a sense of balance, depth, and quiet craftsmanship. Chef Alvin Leung brings his bold creative spirit and boundary-pushing interpretation of Chinese gastronomy, creating a dialogue of flavour that is both expressive and deeply considered.
The evening will feature an 8-course menu that moves gracefully between classic Cantonese roots and modern expression. Selected highlights include a modern interpretation of Buddha jumps over the wall with abalone, sea cucumber, black truffle and foie gras, wok-fried Thai river prawn with green almond and fragrant milk curry sauce, caramelised black char siu, and roasted Chilean sea bass with passionfruit and Champagne sauce. Each course is thoughtfully paired to reveal a dialogue of flavour, texture, and quiet creativity.
