Renowned for producing some of Argentina’s most innovative wines, the Salentein Winery lies in the province of Mendoza, the country’s most important winegrowing region. Salentein has the single largest cool climate estate in the Valle de Uco, an area blessed with beneficial microclimates and a diversity of soils that have led to the discovery of new winemaking profiles.
Distinctly modern, the Salentein’s Portillo range is a youthful, vibrant collection of wines that captivate the senses with expressive fruit character.
Guests at BarSu will be welcomed with a glass of sparkling Chamdeville Brut, Vin Mousseux from France accompanied by an enticing trio of amuse bouche, Vanill? Poached Caryfish and Sour Mango Tart, P?ruvien Potato Blini with Lime Cured Salmon Trout and Serrano Ham with Compressed Melon. The first Salentein wine of the evening will be Portillo, Sauvignon Blanc 2010, a wine of supple citrus aromas and a crisp finish, and the perfect accompaniment to Chilean Crab Cake with Pebre de Tomate and Extra Virgin Olive Oil. Guests will also enjoy Portillo, Chardonnay 2010, a fresh and balanced wine with mineral aromas typical of the Valle de Uco. The wine will be paired with Cr?pinette of Poularde and Chorizo with Sherry Bacon Emulsion. The first red of the evening will be Portillo, Cabernet Sauvignon 2009, an intense red with inviting aromas of dark fruits and hints of spicy black pepper matched with Beef Empanadas followed by the fresh and fruity Portillo, Malbec 2011 with Slow Cooked Venison Loin with Celeriac and Black Berry Balsamic Jus. The memorable evening will end with Yellow Tail Moscato from Australia, a lightly sparkling and lively wine with pure fruit flavors to enjoy with Pisco Scented Fresh Strawberries with Lemon Verbena Foam and Cocoa Meringue.
