The third of our four stages Signor Sassi’s Italian Gastronomic Journey takes us to Veneto, Venice, an area steeped in the flavours of ancient history and culture. Venice is once the proud coloniser of much of the medieval Aegean.
This epicurean expedition of Veneto enables you to savour the varied flavours of this northern region’s food and wine. The fare only Baht 1,200.00 ++ per person or upgrade your experience for just Baht 750.00 nett and experience the wine from the locality with the first three courses.
After our sojourn in Rome and Lazio, it is time to move on to the north of Italy to that proud once independent sea-fairing nation of Veneto (Venice). Commanding the upper Aegean Sea, for centuries, Venetians were master sailors and expert explorers. They conquered much of the Aegean coast line and became extremely wealthy. The results of this wealth can be seen in the city, the 1000-year-old St Mark’s Basilica, the Doge’s Palace, the Piazza San Marko, and the impressive St Mark’s Campanili.
Now you have seen a little of this fascinating region, it is time to eat. There is no better way to start a meal from Veneto than a Pate di Baccala alla Veneziana, a deliciously creamy cod fish pate with toast that delights the buds and then dissolves in an ethereal mist of fishy delight, a starter that speaks for itself. The wine that perfectly suits this dish is Il Grigio Sparkling from the multi-award winning Collanvini winery.
Il Grigio sparkling wine is a blend of the Chardonnay and Pinot Grigio grapes cultivated on the gently rolling hills of Friuli. The grapes are soft pressed in the traditional way to produce a light and refreshing wine that perfectly complements the texture and taste of the cod pate.
Moving on to the second course of Spaghetti alle Vongole, hand-made spaghetti with clams, chilli and garlic, this dish is enough to warm anyone’s heart and invoke a yearning for the Italian countryside. The course is served with an Argentinean white a Torront?s Blanco from the small le Celia winery set in the heart of Argentina’s Mendoza. Imagine if you will, the massive blue snow-capped Andes shimmering in the distance the glacial melt waters irrigating the vines in the flatlands below intoxicating the wine with a wholesome and distinctively clean and fruity nose and palate.
The main course is the piece-de-resistance. Piccione con Salsisccia, a roasted half pigeon stuffed with Italian spicy sausage and cheese in wine sauce. This is a rather exotic and piquant dish that enchants the eyes and tantalises the taste buds of even the most discerning of bon vivant. The gamey pigeon meat is cuddling the spicy sausage just as in a tender lovers embrace.
The wine paired with this dish is a Refosco dal Peduncolo Rosso from the Frantinel winery. Now this wine is particularly suited to the robust flavours of the pigeon and sausage. Its intense flavours echo those of the main course and are perfect for gamy foul and mature cheeses. A bouquet liquorice, blackberries and subtle over notes of spices all go to make this an unforgettable eating experience.
Complete the chef’s Venetian tour de force with a Frittelle alle Mele, a homemade deep fried cake stuffed with apple and dusted with a thin layer of sugar and chocolate.
