Bangkok--5 Aug--midas pr Bangkok’s newest rooftop dining and entertainment destination, Maya Restaurant and Bar was welcomed onto the culinary scene this July. But its newfound success has not been sudden. The Maya tale has taken many years, thoughts and inspirations to create. Three years ago, Fico Corporation Co., Ltd. the owning company of Holiday Inn Bangkok Sukhumvit 22 had a vision. Khun Krit Srichawla, CEO of Fico, owner of some of the best European dining spots in Thailand’s capital including Medici Kitchen & Bar, Nest Rooftop Lounge, he wanted to finally pay homage to his Indian roots — but in a unique and memorable way. This is where the Maya story began. Their vision was for an outstanding rooftop space that encapsulated the best of Indian cuisine in a modern and electrifying setting. They wanted to pull away from ideas of heavy curries and old-fashioned interiors, but rather display Indian fare as the vibrant and delicious creation that it truly is. And the people they entrusted to bring this idea to life was Maya’s trio of experts — Ma?tre D, Akshay Prabhakar, Chef De Cusine, Hardeep Bhatia and Ramneek Lamba Singh, Executive Assistant Manager for Food And Beverage at Holiday Inn Bangkok, Sukhumvit 22. “We want people to come to Maya and enjoy the food - recognise it as the same as their grandmother’s recipe in terms of taste - but see the unique Maya treatment,” says Ramneek. Chef de Cuisine, Hardeep Bhatia and Executive Assistant Manager for Food And Beverage Ramneek Singh Lamba. Maya’s unique take on food is based on from blending Indian street food, dishes created for Maharajahs, true Indian spice blends, the intensity of traditional clay tandoors with fresh produce. And with 13 years experience at some of Europe’s, India’s and now Bangkok’s best kitchens, Ramneek Singh Lamba has been the driving power behind this modern but authentic cookery. Trained in Belgium under two Michelin star chef, Yves Mattagne, Ramneek has been the Group Executive Chef at Hotel Muse Langsuan, Novotel Phloen Chit and Novotel Silom, the Westin Mindscape in Hyderabad and many more. He also had the honour to be part of the Executive chef’s team, organizing an 8-course dinner in honor of Her Royal Highness Princess Maha Chakri Sirindhorn and the proceeds given to The Sai Jai Thai Foundation. “Growing up in Delhi and cooking with my mother from a young age, being fascinated by the local street food and later honing my skills in 5-star restaurants — I wanted Maya to combine all these elements. Tradition, flavor, nostalgia, innovation all in one, and I think we have achieved that,” says Ramneek. His right hand man, Chef de Cuisine, Mr. Bhatia also has 12 years of culinary experience at the highest level. Trained at India’s finest restaurants at The Taj View Hotel in Agra and The Oberoi in Shimla, Hardeep’s strength is in his knowledge of traditional Indian cuisine. “My passion is making Maya’s food authentic, exiting and of course, delicious,” Hardeep explains. “It’s about being true to tradition, but making it fun and interesting for today. Eating great food, having fantastic drinks, enjoying our open-air cigar lounge and our view — and creating unforgettable memories. This is Maya,” Ramneek smiles.
