Throughout January until February at basil, Chef Kesinee invites diners to discover the latest of her popular menus that highlight essential Thai ingredients. This month she draws inspiration from kaffir lime.
Native to Thailand, the kaffir lime or makrut tree produces leaves and fruits rich in citrus oils that impart a distinctive lime aroma and flavor to sweet and savory dishes. Torn or thinly sliced, the leaves are added to soups, curries and fish dishes while the grated zest is often used in curry pastes.
Notable dishes at basil include appetizers of saengwahped, spicy duck breast salad with spring onion and kaffir lime, and the deliciousyam huapleegoongmangkorn, kaffir lime spiced lobster with banana blossom salad.
All made with premium quality ingredients, Chef Kesinee’s inspired menu showcases authentic Thai taste and contemporary presentation. Other highlights include fish dishes oftom saebplagrob, garoupa fillet in kaffir lime and tamarind spiced broth, and pla tod samunprai, wok-fried white snapper with Thai herbs, chilli and kaffir lime leaves.
There’s also tod man talay,kaffir lime spiced shrimp, mussel and tiger prawn patties with coconut palm hearts, and fragrant gaengkhuaneau, southern style beef rib eye curry spiced with galangal and kaffir lime. The delicious lunch or dinner of local flavors end with khaoniewnagoong, a delightful dessert of sweet sticky rice rolls and shredded coconut with dried shrimp.
