Resident Hong Kong Chef Kam is preparing high quality abalone from Japan and Mexico and featuring dishes such as fresh small Japanese abalone in a variety of Chinese cooking styles, sliced Mexican abalone in brown sauce, stuffed dried abalone with shrimp and sautéed Mexican abalone with oyster sauce.
