This Thai summer delicacy, consisting of Jasmine rice with chilled Jasmine scented water and a selection of traditional condiments, apparently has very ancient origins that go back to the reign of King Rama II when it was consumed in the Royal Courts. It was not until the time of King Rama V that Khao Chae became a popular widely consumed dish appreciated for its cooling and refreshing properties. Try it for lunch at Romsai during 12-19 April to celebrate the Songkran festivities.
