Chef Andrew Brown, hotel’s Executive Chef created a special menu including Croquant of Duck Confit with Mango Chilli Jam Chilled Ratatouille Tartlet topped with Seared Tuna & Parsley Aioli accompanied by Champagne Montaudon Reserve Premiere Brut, Reims, NV; Shellfish Bisque with Crab Tortellini accompanied by Francois Paquet, Les Armanys Chablis, A.O.C., 2011; Dory filled with Prawn Mousseline with a Watercress Sauce accompanied by Turpin Bordeaux Blanc, 2010; Traditional Beef Wellington accompanied by Château Mauvinon, Saint-Emilion Grand Cru, 2008; Blue Cheese Beignets with Tomato Chutney accompanied by Château Tourteran, Cru Bourgeois, Haut-Médoc, 2009; end up with Crepe Suzette with Lemon Curd accompanied by Château Suduiraut, Premier Cru Classé de Sauternes, 2006.
