VIE Hotel Bangkok, A Member of the MGallery Collection and its acclaimed La VIE – Creative French Cuisine restaurant are pleased to announce the appointment of Chef Nicolas Basset as the hotel's new Executive Sous Chef, as of 1st March 2016.
Chef Nicolas is well travelled and has lived in four continents as well as having worked with some of the world's illustrious names in gastronomy such as Albert Roux and Marcus Wareing. Growing up in both France and Finland, at a young age Nicolas had originally set out to become a musician. At 19, he moved to London for studies in this area. However, while working there as a part-time chef, the revelation struck him that the kitchen was really where he belonged and that his passion for composition would be equally fulfilled by the creation of delicious and innovative dishes. In his own words, "I continued cooking from then on."
Starting out at Novotel London West in the UK, Nicolas next worked at then Michelin-starred The Orrery Restaurant and as Chef de Partie at Chez Kristof and Michelin-star La Trompette, all well known restaurants in London. In 2010, he returned to Accor Hotels at the Brasserie Roux in Sofitel London St James, and was promoted to Senior Chef de Partie.
At the end of 2011, Nicolas left the UK to assist with the opening of Marcia's restaurant in Goiania, Brazil, for a year, absorbing knowledge about the local cuisine. He then travelled several thousand miles away to assist with the opening of L'Appart at Sofitel Sukhumvit in Bangkok, before being appointed Sous Chef at the Grand Hyatt Erawan Bangkok where he served in this role for three years.
In 2015, Nicolas took a brief stint back in London at the famous 2-Michelin Star Marcus at the Berkeley Hotel in London. Now he is back in the Thailand he loves with VIE Hotel and a welcome addition to the team at La VIE – Creative French Cuisine.
