To celebrate the introduction of its new menu which highlights the cuisine of Thailand's four distinct regions, basil will host an unforgettable wine dinner focusing on northern Thai cuisine. For the "Northern Thai Cuisine & Handpicked Wines Dinner" at basil, our chefs have prepared an extraordinary menu of regional dishes to enjoy with a selection of vintages from Handpicked Wines, Australia. Each dish on the exceptional menu elevates Thai cuisine to new levels of sophistication by using the finest ingredients, traditional techniques, handmade spice pastes, and an extraordinary wealth of knowledge. The chefs have also worked closely with the winemaker to ensure the perfect wine pairing for each dish. A producer of fine wines from Australia and beyond, Handpicked Wines constantly searches for new and interesting sites to grow quality grapes and make elegant wines. Vineyards in the Barossa Valley, Yarra Valley and Mornington Peninsula, are meticulously managed to produce wines of clear regional and varietal character. At basil, Mr. James Hunt, the Export Director of Handpicked Wines will personally introduce diners to wines from the Regional Selection, a collection of classic varieties that reflect the distinctive qualities of their region and maker. The memorable evening at basil will begin with pass-around northern Thai sai oua sausage with a vibrant palate-pleasing Handpicked Regional Selection Prosecco NV from Veneto, Italy. Seated in the stylish contemporary setting of basil, diners will be served yam makeua nua yang, spicy Royal Project eggplant and grilled beef salad accompanied by Handpicked Regional Selection, Clare Valley Riesling, 2012. The old vine, small production Riesling is the perfect match for the beautifully balanced eggplant and succulent beef. The second dish of the evening will be a delicious gaeng oam gai tok, a spicy Royal Project pheasant broth with mushrooms, lemongrass and Thai herbs paired with Handpicked Regional Selection, Yarra Valley Rose, 2012, an unusual union of Pinot Noir and Marsanne grapes that delivers gorgeous berry and spice aromas and a luxurious mouthfeel. Diners will also be served the classic northern Thai gaeng kare gai curry made with mixed vegetables, hummingbird tree flowers, chicken and chili paste, larb nuea, northern-style minced steamed beef salad with chili and herbs, and phad luk mala sai kai, stir-fried young chayote with egg. The outstanding dishes will be accompanied by the full-bodied Handpicked Regional Selection, Coonawarra Cabernet Sauvignon, 2013, and Handpicked Collection, Barossa Shiraz, 2012.
