Monkfish prepared Italian style is available throughout July at Acqua, in Centara Grand Mirage Beach Resort Pattaya.
This firm and meaty fish, which once its central bone is removed has no others, is very versatile. Acqua's chefs are preparing monkfish tail with saffron risotto and chanterelle mushrooms at THB 790++, and monkfish pave, in which the fish meat is formed into squares and served with baby spinach and foie gras, at THB 890++. Also on the menu is monkfish acqua pazza, an Italian phrase that means "crazy water" and is a style of poaching the fish meat, in this case with artichokes. The price is THB 890++.
