His first experience as a barman began as a weekend job while studying at university in his native New Zealand. He was immediately hooked and it soon developed into a passion. Dedicated and wildly creative, Jacob has now spent six years mixing, stirring and shaking cool cocktails and sensational shooters in the world’s trendiest bars. The charismatic young Kiwi uses a potent mix of flair and intelligence, all infused with a sense of history to make high quality cocktails. In the beginning, he fell in love with the rich tradition behind the craft that is responsible for classic drinks like the Martini, Mojito and the Manhattan. It wasn’t long, however, before he was using his natural ability to invent cutting-edge drinks. Jacob was the creative force behind the Matterhorn, Wellington’s legendary cocktail lounge and restaurant, and perhaps the only bar in New Zealand to be held in international regard. While running the bars at Chow and Motel in Wellington, both venues became renowned for their classic cocktails and high level of customer service. In 2002, Jacob was awarded Bartender of the Year and also began using his encyclopaedic knowledge of drinks to conduct cocktail sessions across the country. His funky and exciting blends gained the attention of New Zealand super-premium spirits producer, ‘42BELOW’and he has spent the last 18 months as the company’s ‘Vodka Professor’. Jacob was also instrumental in writing a training programme for the company which evolved into the Vodka University. 42BELOW’s Vodka University is now a globally renowned programme teaching the craft of the cocktail and mixology skills. Jacob has made gin Martinis in Casablanca, Bellinis at Harry's Bar in Venice, Champagne cocktails at the Ritz, and made numerous TV appearances.
