Dishes include classic Pan-Fried Foie Gras with vine-ripened tomato chutney, balsamic reduction and mesculan leaves; or Parfait of Foie Gras and chicken livers with sauternes gelee and toasted brioche. For those in search of an oriental touch, there’s Carpaccio of Beef Tenderloin with soy-glazed foie gras and daikon radish.
