The Lobster Trek menu includes Flame Grilled Phuket Lobster with radish wakame mesculum, jabanaro pepper, fig jam and micro herbs; Boston Lobster and Ahi Tuna Tian with chilled vine tomato & golden pepper soup, and black truffle; Wok Fried Phuket Lobster with flamed sugar snap peas, taro and tsing tao wine; Grilled Wagyu and Sydney Rock Lobster with garlic mash potato, rocket salad & lobster sauce; Seared Cajun Lobster with grilled avocado, sweet potato & parsnip pave, morel glaze; and Crispy Lobster Wonton with mushroom tea.
And during August the famous Trader Vic’s wood burning Chinese oven will be used to create perfect Roasted Maine Lobster served with BBQ sauce and wok tossed white asparagus.
