The renowned monthly wine dinners at Rossini’s are always a highlight of Bangkok’s culinary calendar. In August, a truly special menu will be created in collaboration between mentor, Chef Alfredo Russo, a remarkable Michelin-starred chef acknowledged as being at the forefront of ‘New Italian Style’ cuisine, and his former prot?g?, Chef Federico Allegri, Rossini’s very own culinary tour de force.
The two extraordinarily gifted chef’s exquisite six-course menu will be complimented by an outstanding selection of labels from the respected Pighin Winery.
The winery was founded in 1963 when brothers Ercole, Luigi and Fernando Pighin acquired a 500-acre estate in the D.O.C. Grave-del-Friuli area from aristocratic Friulian family. Pighin enlisted technical expertise tempered by respect for tradition in the uncompromising pursuit of high quality wines. Today, using only grapes from its own estates, the Italian family winery is acclaimed for using the most advanced winemaking technology available to produce reds, ros?s and whites of distinction at its Risano and Caprivo vineyards.
The Pighin Wine Dinner at Rossini’s will begin with Chef Federico’s stuzzichini and savory bites accompanied by Prosecco Gancia, extra dry.
Seated in the enchanting Tuscan villa setting of Rossini’s, diners will be delighted by the chef’s inspired approach to Italian cuisine. Dishes will include cappesante con julienne di zucchini e vellutata di mele verdi, scallop with julienne zucchini and green apple cream served with Chardonnay Friuli Grave DOC 2008, an engaging and complex wine with a delicate scent of vanilla and grapefruit.
The first course is followed by zuppa di porri con lumache e germogli di fagioli, leek soup with snails and mung bean sprouts paired with Pinot Grigio Friuli Grave DOC 2008 while the tortelli del plin con brodo di gallina selvatica, plin pasta with capon essence will be complimented by the vivid Merlot Friuli Grave D.O.C. 2007.
Other highlights of this exceptional culinary evening include risotto mantecato al foie gras con carciofi fritti, risotto with foie gras and fried artichokes matched with the full-bodied elegance of Cabernet Sauvignon del Friuli Grave D.O.C. 2006 from Pighin’s Risano estate.
The memorable dining experience ends with zuppa inglese con sorbetto al cioccolato fondente rio caribe, zuppa inglese with chocolate sherbet served with Limoncello i Sicilliani, followed by coffee or tea with biscotti.
