A divine selection of dishes prepared specially for the evening by Chef Federico Allegri are paired with an equally special range of fine wines. On Tuesday 7th September, Chef Federico’s exquisite culinary creations will be complimented by engaging wines from the renowned Spanish winemaker, Torres. The Torres family has been cultivating their own vineyards in Spain since Jaime Torres established a winery in Vilafranca del Pened?s more than 130 years ago. In the 1970's, Torres' prestigious red wine, Mas La Plana, beat Chateau Latour at the Paris Wine Olympiad, establishing the company as a producer of exceptional wines. Today, the Torres name is associated with some of the finest wines in the world. Wines from family estates in Spain, California and Chile are available in 140 countries and are found on wine lists of the most prestigious restaurants and hotels. As Spain's most successful winery, Torres is also credited with introducing wine lovers to Catalonia's indigenous grape varieties. Rossini’s Chef Federico is a rare and inspired talent from Turin in Piedmont, a region known for its rich culinary heritage. The young and gifted chef has an outstanding culinary pedigree and has collaborated with Chef Marcello Trentini at his lauded restaurant Mago Rabin. The memorable Torres Wine Dinner at Rossini’s will start with Chef Federico’s savory bites and stuzzichini paired with Vina Sol 2008. The ideal accompaniment for the selection of delicious appetizers, Vina Sol displays outstanding notes of flowers and ripe fruits combined with a delightful touch of citrus resulting in a pleasant lingering finish. The first dish of the evening, carpaccio di branzino con pesche candite, sea bass carpaccio with candied peach will be served with Gran Vina Sol 2007, a blend of Chardonnay and Parellada grapes. The elegant and aromatic wine is the perfect pairing for the delicately flavoured fish. The second dish of the evening includes an exquisite cheese produced in the steep valleys of Chef Federico’s home region of Piedmont. Fiocco di robiola con gamberi mazzancolle e salsa alla mora, robiola cheese with grilled tiger prawns and blackberries, will be matched with Sangre de Toro 2007, a wine of rich complex Mediterranean aromas with exuberant notes of spice, liquorice and dark forest fruits. Another highlight of this extraordinary five-course dining experience is cervo con salsa di cioccolato e melograno, fillet of venison with chocolate sauce and pomegranate. Cooked to succulent perfection, the venison is accompanied by Gran Coronas Reserva 2005, an engaging blend of Cabernet Sauvignon and Tempranillo grapes aged for 12 months in American and French oak casks to produce jammy aromas over a toasty background. The evening of fine wines, exceptional cuisine, and stimulating company ends with torta di nocciole con crema di gianduja e gelato al vino moscato, macadamia nut cake with gianduja cream and Muscat sherbet followed by coffee, tea and biscotti.
