Though only 20, Chef Frederico has years of experience. He was only 14 when he started his career as commis de cuisine with Michelin-star chef Antonino Cannavacciuolo at the famed Villa Crespi restaurant in Orta San Giulio. Six years later Frederico became a prot้g้ of Chef Angelo Cangemi at Don Carlos restaurant, where he was restaurant chef. It was there he learned the value of sourcing and working with the best possible seasonal, regional, and domestic products available. Taste his food and you’ll realize just how special this young talent is. Chef Frederico’s signature dishes include Mint-Scented Shrimp and Black Bean Cream; “Plin”—Piedmont-style meat ravioli; Whole-wheat Rigatoni with Ricotta Cheese and Peas; Roasted Octopus with Eggplants and Spiced Oil; Milk, Garlic and Rosemary Marinated Spring Chicken with Potatoes and Green Olive.
