Found in the Langhe and Montferrat area of Piedmont, northern Italy, and Drome in France, the pale cream or brown truffles with white marbling are also the most valuable. They are known as the ‘diamonds of the kitchen’ and in the skilled hands of L’Appart’s Chef, white truffle add another dimension to the exquisite dishes.
