This delicacy is created with "Sakura Ebi", or Sakura Shrimp, a tiny crustacean measuring no more than 5 cm, which is fished in the Suraga Bay of Shizuaka Prefecture. Those who enjoy sushi often have this dish in gunkan style. However, another popular way in Japan to eat them is as a tempura called Kaki-age, made either with fresh in-season Sakura Ebi or fried.
