Transforming fresh pineapple into a divine homemade pineapple Jam which is perfect for mini pancake, he has also reinvented the basic pancake by adding Japanese matcha green tea powder. This has produced a fluffy pancake that is a joy to eat, especially served fresh and warm with homemade pineapple jam and a sweet scoop of green tea ice cream.
