Lufthansa delights travellers with haute cuisine from St. Regis Hotel Bangkok

Bangkok--8 Mar--Total Quality PR Executive Chef Leonardo Concezzi creates stunning menus for First and Business Class passengers Award-winning chef Leonardo Concezzi has been appointed by Lufthansa to create tailor-made premium menus for passengers onboard daily flights from Bangkok to Frankfurt and Singapore to Frankfurt as part of Lufthansa’s in-flight initiative, the Star Chefs program. The innovative program provides Lufthansa’s First and Business Class passengers with a mouth-watering and memorable dining experience starting from 2 March 2012 for the next two years. Leonardo Concezzi, Executive Chef of St. Regis Hotel in Bangkok, has developed his craft in the kitchens of Italy, the Middle East and Asia. The menu of Concezzi for the next two months provides those on board with an enticing selection of Mediterranean dishes with an Asian twist: In First Class, there will be a choice of three starters: slow cooked roast beef with celeriac tartar in saffron mayonnaise; sea bass terrine with mango chutney; and cherry mozzarella wrapped in tomato with balsamic drops. Among the main courses are pan-fried New Zealand lamb loin with potato gratin, roasted tomato wedge and saut?ed zucchini surrounded by lamb jus; pan-fried sea bass with a selection of seasonal vegetable marinated in soya sauce and buttered potato; and roasted duck curry with jasmine rice, snow pea and shitake mushroom. For dessert, Leonardo Concezzi created some tempting choices: St. Regis Chocolate Brownie with fresh berries and warm apple tart with Cr?me Anglaise in vanilla ice cream. Passengers in Business Class will also experience the culinary delights of Leonardo Concezzi. Guests can begin with seared tuna loin ? la Nicoise with French dressing or chicken galantine and celeriac salad. As main dishes, Leonardo Concezzi presents beef chorizo with port wine jus served with saut?ed Mediterranean vegetables; pan-fried sea bass with thyme, buttered potato and seasonal vegetables marinated with soya sauce; paccheri staffed with spinach and ricotta served with tomato concasse and green asparagus. For dessert, Passengers are offered Opera Cake St. Regis Style with caramel sauce. Born in Italy, Leonardo Concezzi began his culinary career at the age of 14, studying at the Istituto Professionale Alberghiero in Spoleto, Perugia, where he gained diplomas in hotel hospitality. He acquired invaluable experience at several hotels in Italy while studying before moving to the Hayman Island Resort in Australia, one of the leading hotels in the world. After moving to the Middle East to work at the Sheraton Doha Hotel, the Jumeirah Beach Hotel in Dubai and the Four Seasons in Damascus, he returned to Italy to become Executive Chef at Fortevillage in Sardinia. Now at renowned St. Regis Bangkok, Concezzi combines traditional Mediterranean cuisine with an exquisite Asian flair.
