The Antinori family of Florence, Tuscany, is one of the world's oldest and most distinguished wine producers with a venerable history spanning a remarkable 26 generations and stretching back to the 14th century. Over the years, the renowned family has skillfully combined an unwavering respect for tradition with innovation to create outstanding internationally-acclaimed wines with a distinctly Tuscan character.
Overseeing the company today is Marchese Piero Antinori, a passionate winemaker who believes that the role of wine is to enhance the dining experience. At Rossini’s, the harmonious pairing of Chef Stefano’s authentic Italian cuisine and Antinori’s Tuscan treasures prove him right.
Seated in Rossini’s enchanting Tuscan villa setting, discerning diners will enjoy a memorable 5-course dinner, starting with Chef Stefano’s delicous lingua di vitello croccante con cipolle all’agro di lamponi, crunchy veal tongue with raspberry scented onions accompanied by Villa Antinori Bianco 2010. A white wine of true Italian character, it has an intense bouquet of bananas, orange flowers, and roses, and a fine aromatic persistence on the palate to pair beautifully with the veal.
The second dish, filetto di rombo alle mandorle Romanesco e olive Taggiasche, turbot fillet with almonds, Romanesco and Taggiasche olives will be complimented by Villa Antinori Rosso 2007. This Robert Parker 89 point wine delivers an abundance of dark red fruits, spices, leather, licorice and herbs in an attractive, mid-weight style.
Next, tortelli alla norcina, tortelli filled with liquid ricotta, pecorino cheese and summer truffles matched with Antinori Chianti Classico Riserva ‘Marchese Antinori 2007, an engaging wine typical of the Sangiovese grape with soft tannins and vibrant acidity due to careful aging in the barrel.
Diners will also savor Chef Stefano’s exquisite sella di cervo con sedano rapa, mostarda di mele e profumo di Tignanello, an intriguing dish of venison short loin with celery root, apple ‘mostarda’ and Tignanello perfume. The succulent game will be served with the Robert Parker 94 point Antinori Tignanello 2008, an exceptional wine that impresses with its sublime elegance, precision and layers of oak-aged fruit that caress the palate like cashmere.
The unforgettable evening of gourmet cuisine and highly acclaimed wines will end with crostatina di albicocche con gelato alla menta, apricot tart with mint ice cream served with Antinori Muffato Della Sala 2007. The only vintage of the evening from the Umbrian region of Italy, the grapes of this sweet wine have been exposed to botrytis, or “noble rot” and is produced in limited quantities.
