Revered by chefs and gourmands alike and found only for a brief season each year from October to December in the forests of northern Italy and parts of France, they are prized for their unmistakable aroma - an intoxicating blend of earth, musk, and forest air. Impossible to cultivate and best enjoyed fresh, white truffles capture a fleeting moment in nature, transforming even the simplest dish into an extraordinary experience.
Crafted by Chef Luca Russo, the November menu at Red Sky highlights the truffle's distinctive perfume and depth of flavour through three creations that reflect the restaurant's signature modern European style. Diners can savour Hokkaido scallops with hazelnut and white truffle (THB 1,950++), where the scallops' natural sweetness meets roasted nut notes and a final flourish of white truffle; traditional homemade tagliolini with parmesan and white truffle (THB 1,650++), a timeless pairing of fresh pasta and truffle layered with the richness of aged cheese; and risotto with red prawn carpaccio and white truffle (THB 1,850++), where the sweetness of prawn meets the earthy intensity of truffle in a beautifully balanced dish.
