Anantara Bangkok Riverside Resort & Spa proudly announces the appointment of Chef Michele Laiso, who took over responsibility for the resort’s Italian restaurant, Brio.
Born in Latina, central Italy, Chef Michele grew up on the delicious homemade specialties of this region, as well as the southern Italian cuisine of his grandparents’ trattoria in the countryside of Naples.
Chef Michele began his career in Europe, working at Michelin star restaurants in London and upscale establishments in Italy, Sardinia, Greece and Tunisia, including time spent mastering the art of wood fired oven pizzas. Relocating to Australia, he secured a Chef Tournant position with a fine dining Italian restaurant in Melbourne which won the Australian Good Food and Travel Guide 2008 — 2011. He then moved on to Thailand to become the Italian Chef for Le Meridien Khao Lak Beach & Spa Resort’s new Italian restaurant Favola, which was named Thailand Best Italian Restaurant in 2011 by Thailand Tatler Magazine. Progressing his career in Dubai, Chef Michele enjoyed an Italian Sous Chef role for the signature Italian restaurant Vivaldi at the five star Sheraton Dubai Creek & Towers, where he created banquets for VIP consulate and sheikh functions, and was a proud member of the team which saw the restaurant being listed in the Top 10 Italian Restaurants in Dubai by www.hotelsindubai.com. Chef Michele’s traditional Italian background and natural enthusiasm is matched by impressive international experience and an innovative approach. As a result, Brio guests are delighted by the most passionate Italian cuisine, whether they desire expertly created classics or gourmet surprises.
Chef Michele comments - “From an early age I explored local specialties and ingredients to discover new ideas, and over time I began to specialise in seafood and pasta creations. Pasta is a timeless Italian staple and I’m always searching for fresh ways to enhance my recipes. Sometimes just by adding one new ingredient, the taste can be significantly altered. My dishes are characterised by a lack of cream and butter, and instead I focus on using the finest tomato sauces, flavourful meat and fish stock, and the very best Tuscany oils. I also love rejuvenating Italian classics and always use local produce, since this creates a huge difference in the flavour impact, and also infuses the richness of the destination, the traditions of that culture, and the warmth of the human relationship that goes with it.”
Brio is open daily for lunch from 11:30 am to 2:30 pm and for dinner from 6:00 pm to 10:30 pm. Advance reservation is highly recommended.
