Let’s start the odyssey in Sicily with a four course choice of Malanzana al Forno, a delicious vegetarian dish of baked eggplant with a dusting of Parmesan cheese, Mozzarella and tomato sauce with wine from Vigneti Zabu, on the outskirts of Sambuca di Sicilia on the mountainside above the nourishing waters of Lake Arancio. The second course is a typical Italian dish of Ravioli Norma, another vegetarian treat; home made ravioli liberally stuffed with ricotta cheese, fried eggplant with basil sauce and a tomato base.
