Green asparagus derives its colour from the process of photosynthesis as the spear emerges from the soil into direct sunlight. The slightly tender texture and sweeter flavour of white asparagus make it a delightful alternative to green asparagus. Wild asparagus grows outside of cultivation. Their flavours are earthy, grassy and nutty, reminiscent of the terrain in which they are surrounded.
