Start off with free-flow Champagne Lombard et Cie. Choose between the golden brut with its fresh nose, tiny vanilla notes and warm toasted overtones, or the pale salmon pink rosé that combines the elegance and freshness of chardonnay with the complexity of pinot noir.
New to the already impressive harvest from the sea which includes Maine lobsters, Phuket lobster, Slipper lobsters, Crayfish, Deep Sea Tiger Prawns, Alaskan King Crab, and four kinds of French oysters,
Other new temptations include Bellota Reserva Iberico Ham, foie gras terrine with figs accompanied by Sauternes wine, sushi and tataki of Japanese Kagoshima Wagyu. In addition a gourmet pork station with Cantonese style suckling pig, slow roast Iberico rack, truffled pork cheeks, gourmet pork sausages from Michel Orgier were added, There is a new selection of rare seasonal farm cheeses from Italy and France.
The kitchen team have added new highlights to the cooked-to-order menu such as artichoke & black truffle soup with toasted mushroom brioche, warm Kumamoto oysters with French “Echiré” butter & herbs, butter roasted Nova Scotia lobster & mushroom “Vol Au Vent”, charcoal grilled half Phuket lobster with fresh herbs & lemon butter, diver scallops in their shell with Noilly Prat beurre blanc & Oscietra Carviar, poached French Guinea hen with Basmati rice & Albufera sauce, charcoal grilled Wagyu beef tenderloin with Bearnaise, pan seared duck foie gras with warm apple, and Australian lamb rack with rhyme and garlic jus is served through the brunch.
