Executive Chef Koen Lefever, from the famous Belgian restaurant group managing Brasserie Pakhuis in Gent, Docks Café in Antwerp and La Quincaillerie in Brussels, will soon be flying directly to the Millennium Hilton Bangkok’s award-winning restaurant, PRIME, where he will be delighting guests with his famous Brasserie-influenced cuisine from 24th to 29th November 2014.
During Chef Koen’s visit to PRIME, Bangkok’s superior riverside steakhouse and grill, diners will enjoy a variety of grilled treats. In addition to smoked eel, served with Belgian endives, frisée, fried mussels and mustard mayonnaise, there will be cod fillet with crushed potatoes, buttermilk and leeks; North Sea shrimp accompanied with beer mousseline; and grilled North Sea sole and fresh fries, carefully balanced with water cress and mayonnaise.
A special la carte menu has also been prepared for the visit, along with a degustation menu and food pairing with Belgian beer, recommended by a Belgian Beer Sommelier.
And just to ensure the meal ends on a sweet note, Chef Koen’s dessert line-up is guaranteed to tempt even the most weight conscious among us. Baked jonagold apple offers a sentimental reminder of winter fare, while gratinated sabayon van “kriek” beer is a splendid Italian dessert with a difference. Other desserts designed to hit the sweet spot include vanilla ice cream, caramelised conférence pear, and speculoos ice cream with Luik syrup.
Chef Koen's signature mussel dishes will also be available at FLOW, all-day dining restaurant.
For one who love cooking, Chef Koen will share his tips with the cooking class with lunch on 28 November 2014 from 10 am onwards. Price at THB 2,000++ per person.
