This set menu is THB 3,999 net per person, excluding beverages. The majority of ingredients in Chef’s inspirational New Year menu are imported directly to our kitchen from his homeland France starting with Cappuccino of Wild Mushrooms, a beautifully creamy black trumpet mushroom soup with fungi. Then it’s on to an impeccable Lobster Salad served with avocado mousseline, white asparagus, sun-dried cherry tomatoes and dressed with a thyme-citrus sauce To follow Chef offers Pan-Fried Duck Liver served with sweet and tangy pineapple chutney and “pain perdu” French toast topped with poached pear and rosemary and port wine sauce, leading on to Seared French Line Caught Sea Bass Fillet direct from Brittany in the north-west of France. This dish is accompanied by a Bouchot mussels and clam broth, lime leaves and coconut bisque. Before starting the main course Homemade Green Apple Sorbet will be served to cleanse the palate. The main course is perfectly-marbled Seared Waygu Fillet imported from Australia, renowned for being so tender, juicy and melt-in-your mouth. This menu is accompanied with salsify, Jerusalem artichokes, sautéed green asparagus and dressed with cognac and peppercorn sauce. Completing your meal is Dark and Milk Chocolate Mousse together with homemade raspberry sorbet and decorated with citrus tuile.
