Chef Stéphane Carbone is a paragon of extremely fine French dining, as traditional and simple as it has been through the ages. As a child, he enjoyed a great family tradition of Sunday lunches, where his passion for cuisine began, learning from his grandmother who educated him on the meaning of true
products which are actually coming from the garden as well as local region of Chef Stéphane.
Nowadays, Chef Stéphane still loves exploring specific regional ingredients and mixing local produce from Lyon to Normandy, where he settled down in 2003, or even Calabria, incorporating his Italian routes. Soon after Chef Stéphane moved to Normandy, he opened his first restaurant, l'Écailler, in Port en Bessin, which earned him his first Michelin star in 2006. Then, in 2008, he opened his second restaurant, Stéphane Carbone Restaurant, in Caen, Normandy, which also acquired a Michelin star and has made his cuisine world famous. In 2014, he had the great honour of cooking for Queen Elizabeth of the United Kingdom, US President Obama, Russia’s President Putin and former French President Nicolas Sarkozy, as well as numerous other dignitaries and heads of state, on the occasion of the 60th and 70th Anniversary of the D-Day Ceremony landings, which led to the liberation of France and Europe during World War II. Neither unpredictable nor excessive, Chef Stéphane’s talent is enhancing food ingredients rather than transforming them, offering pure, simple and authentic cuisine.
