Grand Hyatt Erawan Bangkok has announced the appointment of Kevin Kristensen as Chef de Cuisine, Tables Grill Restaurant.
Kevin Saint-Jean Kristensen started his culinary career in Copenhagen, Denmark in 2003. Starting as a dishwasher in his teenage years, Kevin quickly moved to kitchen hand; until one impactful day his Chef, told him to take up culinary education. He started his training in 2005 and has never looked back.
During his apprenticeship, Kevin worked at Albi in the South of France, and it is here, where he first truly fell in love with hospitality and the life of a Chef.
He recalls this period as “Love at first sight”. His dreams progressed quickly as a young Chef, spending time at Michelin star restaurants such as the two star Michel Sarran in Toulouse and the celebrated two star restaurant at Noma in Copenhagen.
Throughout his four years of Culinary education, Chef Kevin graduated with a bronze medal, the second highest possible score; along with being awarded “Best Chef of Class” at Hotel & Restaurant College Nordzealand, Denmark.
A Sous Chef by age of 23, at the highly respected Bistro (Wilder) Christianshavn in Copenhagen. The restaurant claimed top spot after Noma and Era Ora. From Copenhagen a fresh start began in Melbourne, Australia, working at the Royal Danish Embassy. During his stay in Melbourne Kevin enjoyed positions with two renowned restaurants; the celebrated Vue Du Monde in Melbourne’s central district and Circa at Circa The Prince, St Kilda. Both restaurants are highly acclaimed restaurants in Australia, as are their Chefs and Owners.
Chef Kevin returned to Denmark in 2011 to settle for a while, after working some incredibly hard years in demanding restaurants of excellence. In this time of reflection, Chef Kevin looked to Asia, always an appealing destination. He is inspired by Asian cuisine and its culture. Having travelled to Guangzhou, China and spending one year working at Westin Pazhou; Kevin then moved to Kuala Lumpur, Malaysia working at the helm of Marriott’s Renaissance Kuala Lumpur Hotel.
Six diverse destinations over the past ten years, and now happily adding a seventh with this move to Bangkok, Thailand.
Kevin is elated to be joining the iconic Grand Hyatt Erawan Bangkok, as Chef De Cuisine of the fine dining restaurant Tables Grill. He says “it’s like arriving home to what I truly love, cooking”.

Bangkok’s first Traditional European restaurant with Tableside cooking, serves premium meats and seafood dishes in a European style setting. A place to celebrate and entertain for lunch and dinner. The Dining Room has a capacity of 105 seats, offering a combination of lounge and formal seating with five dedicated “live” cooking tables, two private rooms with capacity of 12 and 32 people; ideal for private dining and entertainment.

Set lunch is only THB 650++ for 3 courses and a selection of ice teas. Sunday Champagne Brunch is THB 3,500++ including free flow Moët and Chandon and selected premium wines.
