The menu starts off with 3 selections. You can choose from Truffle-infused Home-cured Ham served with Garden Herb Salad or Silken Tofu Pudding and Norwegian Salmon Tartar served with Ripe Tomato Sauce or enjoy the Rare Kagoshima Wagyu and Australian Cream Cheese with Yuzu Citrus served with Organic Greens and Awaji premium salt.
The 2nd course allows you to pick one of the three gourmet dishes namely: French Foie Gras Terrine served with PineappleCaramelized, Ripe Mango Sauce and Chardonnay Lime Jelly; Pike Conger Eel and Salted Pork Aspic served with Mussels, Ark Shell and Four Pepper Vinaigrette and Fresh Fried Oyster Croquette in Chilled Tomato Soup served with Caviar.
The 3rd course is seafood selections of Warm Spear Squid stuffed with Italian Porcini Mushroom and Mixed Grain Riceserved with Balsamic Vinegar Sauce and herb oil , Sautéed Hokkaido Scallops in Consommé Soup with Snow Crab and Egg White Ribbon served with Bok Choy and the South African Omar Lobster Bisque.
The meat dish comes as the 4th course with choices of Stuffed Chicken Ballotine served with Young Chicken Jus, Roasted Argentinean Beef Fillet served with Shallot Fondu Sauce and Seasonal Vegetables, Herb Crusted New Zealand Lamb Rackserved with Seasonal Vegetables, Low-heat Slow-roasted Duck Breast with Pistachio and Honey Crust served with Curry-infused Sauce or the Premium A4-ranked Miyazaki Wagyu Roast topped with French Foie Gras.
