On Thursday 31st March Babette's | The Steakhouse Bangkok at the award-winning Hotel Muse Bangkok will host a special Head to Tail Dinner with chef and artisan butcher, Joe Sloane. The renowned restaurant with also feature Sloane's artisan meats and charcuterie on the menu from 1st – 30th April.
For one night only on 31st March from 7 p.m., renowned Bangkok chef and butcher, Joe Sloane will serve an outstanding dishes made using his meat products. Joe will also provide insight into his artisan produce and offer a range of items for sale at the end of the evening. The memorable evening at Babette's | The Steakhouse Bangkok will also feature live music from a talented vocalist and pianist.
Joe Sloane is a chef who discovered his love of butchery and charcuterie while training under a three star Michelin Maitre Cuisinier de France. He went on to spend more than a decade working in Michelin star restaurants and the kitchens of 5-star hotels before eventually pursuing his passion for butchery. He established Sloane's, a small business making artisan products using free range pork from ethical farms.
The evening at Babette's | The Steakhouse Bangkok will begin with a 'flying buffet' featuring a variety of cured hams, Bratwurst with sauerkraut, and crispy pork belly with red cabbage and apple textures. Guests will then enjoy a 3-course sit-down dinner starting with tiger prawns wrapped in pancetta, grilled zucchini, sauce vierge with tomatoes, pine nuts, capers, chive, lemon zest and basil, and all topped with crispy deep fried pig's ear. The outstanding dish will be followed by slow cooked pork shoulder with pumpkin puree, red wine shallots, and Chinese kale. The special evening will end with a dessert of white chocolate crème cheese mousse, strawberries and pistachios.

The Head to Tail Dinner with Joe Sloane is at 7 p.m. on 31st March. Price: THB 1,900++ per person.
A selection of dishes made using Joe Sloane's meats and charcuterie will be available throughout April starting from THB 450++ per dish.
