Deciding to make cooking his career, he vowed to himself that one day he would work in a 3-Michelin star restaurant. In pursuit of this goal, he went on to attend the hotel school of Dinard in Brittany, and obtained his CAP and BEP Kitchen in 1983. At 21, Bruno achieved his dream when he was hired to work with Georges Blanc at the prestigious 3-star Vonnas restaurant in Bresse. In 1989, he began working at a famous French restaurant in a 5-star hotel in Bangkok, where he eventually became Executive Chef in 1993. After moving to Cannes in 1995, Bruno opened his first restaurant, La Villa des Lys. He won his first Michelin star in 1997. He was also voted Best Chef of the Year by the Gault-Millau gourmet guide. In May 2003, Bruno received the coveted Medal of Chevalier of Arts and Letters from Jean-Jacques Aillagon, Minister of Culture and Communication. In 2005, he was awarded two Michelin stars for his superb culinary work at La Villa des Lys in Cannes. Upon inaugurating his next restaurant, La Villa Archange, Bruno was again awarded two Michelin stars in 2011 after just ten months of opening. Chef Bruno has also been awarded the BIB Gourmand, and achieved great success with the 50th and 60th anniversary dinners of the Film Festival de Cannes.
