Kisso's core mission, to mirror the dining trends and seasonal specialties in Japan, continues to delight with a mouth-watering month of kinki fish, available from October-November 2016.
Kinki Fish, The taste is close to that of madai snapper but with more delicious fat. As such, it is considered a delicacy in the same league as toro or chu toro tuna. Its bright red skin turns orange when grilled and gourmands savor it for its smooth, slightly sweet, pale pink flesh that has a similar sheen to the polished inside of a conch shell.
