Named Ratri, Chabaa, Montra, and Mali, each sequence is perfectly balanced for flavour, appetizing appearance and serious nutrition.
Too many highlights to mention, so we'll just pick one dish from each. From Ratri "traditional hot and spicy tom yum soup with seabass fillet"; from Chabaa "red curry with crabmeat and betel leaves"; from Montra "charcoal grilled marinated pork spare ribs served with spicy Isarn sauce"; and last but not least from Mali "ceep-fried seabass topped with sweet and sour tamarind sauce, fresh acacia and coriander leaves."
