For his "Stufato di Cinghiale alla Mediterranea" the boar is cooked slowly for 4 hours, until tender and moist, and served with a pumpkin puree and deep-fried smoked Scamorza cheese. A strong yet delicate flavor, straight from the shores of the Mediterranean, will delight all Italian food lovers.
