The man of the moment is Master Dim Sum Specialist Jeffrey Kwan, who currently practices his art and craft full time at the remarkable RED Chinese Restaurant at the highly-rated Pullman Kuala Lumpur City Centre Hotel & Residences (Pullman KLCC).
Swissotel Bangkok Ratchada's Chinese restaurant, renowned for its consistent top quality and creativity, provides the perfect stage for Chef Kwan to delight discerning palates with his artful balance of traditional techniques and innovative ideas.
His intricate and addictive dim sum dishes range Steamed Jade Dumplings with Dried Scallops, Mushroom, Prawn, Chicken; Vietnamese Spring Rolls with Mango & Prawns, and; Pan-Fried Crispy Pancake Filled with Prawns and Foie Gras, among the many.
For the past 18 years, Kwan has been fine tuning his skills and exercising his creativity at several notable restaurants and hotels. While perfecting traditional techniques and classic forms, he has ventured into new territories with his sharp instinct for modern twists, winning many fans along the way.
It is no coincidence that he calls RED, itself an unconventional Chinese restaurant specializing in modern Cantonese cuisine, his home these days. The restaurant's identity is defined by eccentric, Insta-ready decor and outsize photos of designer cheongsams; a collaborative effort between award-winning photographer Kenny Loh and renowned couture fashion designer, Carven Ong. And Kwan's culinary creations are right on-song.
Also highly stylised, in a timeless classical way, Loong Foong, is giving Chef Kwan full creative licence to pull off a virtuoso performance of his culinary craft.
