Bangkok--23 Nov--Siam@Siam Design Hotel Bangkok Taking place on Wednesday November 28th, on 6-8.30 pm. and 9-11.30 pm., Farmer's Talk Dinner #2: Fishing for Change will welcome Khun Saowalak Pratumtong and Khun Chatjaporn loyplew, the representative of Fisherfolk (www.facebook.com/FisherfolkSE), a joint enterprise project which works to improve the livelihood of small-scale fishermen in Southern Thailand. On the night, TAAN Executive Chef Monthep "Thep" Kamolsilp will prepare a special 9-course menu (THB 2,500++ per person) showcasing fresh, clean and formaldehyde-free seafood sourced from Fisherfolk's network of sustainable fishermen in the provinces of Prachuap Khiri Khan, Nakhon Si Thammarat, Pattalung and Satun. On the menu will be Fisherfolk's popular products like Satul's Line Caught Grouper, Nakornsri-Thamarat's Scrabbard fish, Satul's trevally which Chef Monthep will prepare in Southern Thai dishes inspired by the stories of the fishermen. The highly will be 8 hour cooked fish & shrimp paste cloudy broth with satul squid, razor clam, and threadfin fish finished with pork crackling Charcoal grilled Trevally on Mashed Chicken liver and pumpkin with Ginger torch infused Sea Asparagus and Stir fried mini guiduck with garlic and dill, Moutain rice-sotto with coconut milk and homemade butter oyster concentration Throughout the evening, Khun Saowalak and and Khun Chatjaporn will be on hand to discuss Fisherfolk's activities aimed at supporting small-scale fishermen in the face of commercial competition, conserving the ocean ecosystem in Thailand's south, and improving the health of seafood consumers. They will also discuss in detail the project's sustainable fishery practices, including non-invasive seine net techniques and the promotion of non-chemical use in preserving the freshness of sea catches.
