Highlights include hummingbird tree flowers stuffed with chicken and crab meat accompanied by salted fish and coconut milk foam, a classic combination of central Thai flavours. Chef Krit also creates a delicious paste with seasonal rice field crab complemented by roasted sticky rice and pungent mustard greens. His grilled river prawn with sweet fish sauce, cream of fried shallots and neem buds is a symphony of flavors. Flowering in the cool season, neem buds are said to be an elixir and their bitterness contrasts beautifully with the sweetness of the prawns and shallot. Next, diners can enjoy seared tuna with bamboo shoots, pumpkin, water dropwort and fermented fish innards, a southern Thai dish renowned for its pungency, here cleverly reinterpreted by Chef Krit to create a more delicate flavor. Staying in the south but embracing Chinese-Thai influences and modern techniques, his pork belly is slow cooked in shrimp paste for 24 hours to succulent perfection and served with quail egg, Christmas berry leaves and nitta beans, while his braised beef short ribs in a southern curry use sharp and spicy pickled finger roots to cut to through the richness of the beef and creamy curry sauce.
